Hagalkayi Sweet Sabji

Hagalkayi (Bitter gourd) is very healthy vegetable but hearing the name itself many people avoids to eat because the answer is bitter but hereafter you can’t say as you don’t like bitter gourd, if you taste this recipe. I prepared in such a way that you feel eating like other sabjis and asks for more and more, cook, eat and feel a different and yummy taste.

Preparation time: 15mins
Cooking time: 25mins
Serves: 6

Ingredients:
½ kg Hagalkayi (Bitter gourd) 
5tsp Tamarind pulp
1tsp red Chilly powder
3tsp vegetable oil
1tsp Mustard seeds
1tsp Sesame powder
3tsp Jaggery
½ tsp Turmeric powder
3tsp coarsely chopped Coriander leaves 
10 Curry leaves
Salt
Water

Procedure:

1.     Clean Bitter gourd in water, cut in to pieces of 2cm long by removing the inner stuff. Soak it in water with salt and turmeric. After some 10mins using palms squeeze the water from bitter gourd and keep it aside.
2.     Switch on the stove, keep a frying pan to heat.
3.     Add 2tsp of oil and Bitter gourd, fry continuously till bitter gourd turns dark brown and transfer into a plate.
4.     Take the same pan add 1tsp of oil followed by mustard seeds as its splutters add curry leaves and tamarind pulp, stir for 3 mins, then add bitter gourd and fry.
5.     Add salt, red chilly powder, jaggery and sesame powder and fry, you can add little water if the sabji is much thick.
6.     Switch off the stove and add Coriander leaves.
7.     Healthy and yummy Hagalkayi Sweet sabji is ready to eat with chapathi, roti and even with rice also.
