Bhindi Tomato Sabji


Ladies finger (Bhindi) is a very healthy vegetable, which sharpens the memory, so see to that your children will not miss any Bhindi dishes. Here I tried Bhindi with Tomato combination to make a sabji, the cooking process is very easy. Try it and i am sure you will like it.

Preparation time: 20mins
Cooking time: 20mins
Serves: 6

Ingredients:
½ kg Bhindi (Ladies Finger)
2cup chopped tomatoes
1cup grated Coconut
1tsp Bengal Gram dal
2tsp red  Chilly powder
3tsp vegetable oil
1tsp Mustard seeds
½ tsp Garam masala powder
3tsp coarsely chopped Coriander leaves
10 Curry leaves
Salt


Procedure:
1.           Clean Bhindi’s in water and cut as 1inch long.
2.           Switch on the stove, put a frying pan to heat.
3.           Add 2tsp of oil and Bhindi, fry thoroughly as bhendi will leave all the sticky, transfer bhindi into a plate.
4.           Use the same pan, add 1tsp oil for seasoning, followed by mustard seeds, Bengal gram dal, sauté till dal turns slight brown.
5.            Add Tomatoes and curry leaves, fry for 3 mins.
6.           Later add fried Bhindi into it, followed by salt, red chilly and garam masala powder and mix well.
7.           At the end add coconut and coriander leaves and swtich off the stove.
8.           Bhindi Tomato Sabji is ready to serve with chapathi, roti or puri.
