Vegetables which are very much required for a healthy body, but now a day’s intake of such fresh vegetables has reduced because of busy life no time to cut much vegetables, so people are going more for ready food items, here I used many vegetables and made a delicious curry, when I prepared this at home everyone appreciated a lot, its mouth watering so even you cook and get appreciations from yours…

Serves: 8
Ingredients:
1cup chopped Capsicum
1cup chopped Potato (Peel the potato skin before chopping)
1cup chopped Beans
1cup chopped Carrot (Peel the potato skin before chopping)
½ cup chopped tomatoes
½ cup grated Coconut
½ cup Cashew
½ cup sweet Curds
3 Tomatoes
5 Green chillies
2tsp chopped Ginger
4tsp vegetable oil
1tsp Jeera
1tsp Garam masala powder
½ tsp Sugar
6tsp coarsely chopped Coriander leaves
Salt
Water
Procedure:
1. Switch on the stove put a bowl of water to heat.
2. Add carrot, beans and potato and half boil them, later strain the water and keep the vegetables aside.
3. Grind 3 tomatoes, 3tsp of coriander leaves, cashew, green chillies, ginger and coconut, make fine paste.
4. Keep a frying pan to heat, add vegetable oil followed by jeera and sauté.
5. Add the grinded paste in to pan and fry as the mixture turns slight brown (you can add little water if the paste is very much thick).
6. Later add half boiled vegetables and capsicum fry for 5 mins.
7. Add salt, garam masala powder, sugar and curds at the end.
8. Add 3tsp of coriander powder mix well and switch off the stove.
9. Spicy Mixed Vegetable curry is ready to eat, this can serve with roti, chapathi or puri.
